Freezer Waffle Recipes (plus other freeze ahead breakfast ideas) - The Mom Initiative (2024)

Spread the love

Mornings… SIGH. I am so not a morning person, I used to be before I had kids. This means I’m not exactly awake in the mornings, not to mention the challenge to get everyone out the door (on time!) to work and school makes for an interesting morning. This means I need to find ways to save time and still serve my kids a healthy breakfast. Freezer waffles are the perfect solution.

You can make large batches ahead of time. Then in the morning, grab the desired amount of waffles and place in your toaster or oven. Viola! Breakfast is served. One of the great things about waffles is they are portable, meaning if you need to get out the door sooner, simply add sliced fruit or peanut butter, fold the waffle in half and your kids have a portable, tasty breakfast. 🙂

A healthy and freezable recipe!

Ingredients

  1. 1 1/2 cups flour (1 cup of wheat, 1/2 all purpose flour)
  2. 2 Tbsp sugar
  3. 2 tsp baking powder
  4. ½ tsp baking soda
  5. ½ tsp salt
  6. 1 1/4 -1 1/2 cups milk
  7. 2 eggs

Instructions

  1. Mix together ingredients.
  2. Spray waffle iron with cooking spray and cook as directed for your waffle iron. The waffles should be lightly golden brown on both sides.
  3. Spray between each batch of waffles and repeat until you use all the batter.
  4. To keep waffles crispy as they cool place them on a cooling or baking rack in a single layer. Stacking them will cause them to soften because of the heat and steam.
  5. Allow waffles to cool and then flash freeze. (Place waffles on a cookie sheet and place in freezer for 20 to 30 minutes until partially frozen).
  6. Then remove waffles and place in a freezer safe container or Zip-lock freezer bag).
  7. When ready to eat, remove desired amount of waffles from freezer, toast waffles in toaster, toaster oven, or bake in over at 350 degrees until warm and crispy.

Notes

  1. For variations, you can try different kinds of milk like coconut milk or almond milk. Other options include adding 1/2 to 3/4 cup applesauce or ripened bananas.

Ingredients

  1. 3 cups rice milk
  2. 1 cup brown rice
  3. 2 cups gluten-free oats (you could also use millet or brown rice)
  4. 4 tablespoons coconut oil, melted
  5. 4 teaspoons vanilla
  6. 4 eggs
  7. 4 teaspoons baking powder
  8. 1 1/2 teaspoons salt
  9. 1 teaspoon baking soda

Instructions

  1. Combine rice milk, grains, coconut oil, eggs, and vanilla. Blend on high for two minutes until the grain is completely ground and blended.
  2. Add baking powder, salt, and baking soda. Turn on blender again and mix until blended. Oil or butter the waffle iron and cook waffles for 2-4 minutes each, until done. Allow waffles to cool, flash freeze (place waffles on a cookie sheet and place in freezer for 20 to 30 minutes until partially frozen.)
  3. Then remove waffles and place in a freezer safe container or Zip-lock freezer bag).
  4. On breakfast morning, remove the desired amount of waffles and toast in toaster, toast oven, or in oven at 350 degrees until crispy.
  5. Makes about 10 to 12 waffles.

Notes

  1. Another option to add more flavor to your waffles is to add over ripe bananas or 1/2 cup of apple sauce. My kids love these variations.

FAQs

How to make waffles ahead of time for a party? ›

Yes, it is quite easy to make waffles that are perfect for eating on another day. By purposefully undercooking them a bit, you can then allow them to cool before wrapping them in pairs with plastic wrap and then placing them in an airtight plastic bag. (Cook them until they are still pale in color, but cooked through).

Can you make waffles in advance? ›

If you're working ahead, cool the waffles and store in the fridge or freezer. When it's breakfast time you can reheat your waffles toaster oven, cut into dippable pieces, and serve with maple syrup on the side. A make-ahead breakfast your kids will love.

Can you make waffles ahead of time and freeze them? ›

Arrange the waffles on a baking sheet and freeze until hard, about two hours. Next, you can stack the pieces into a resealable plastic bag with each layer separated by either parchment or wax paper. Squeeze as much air out of the bag as possible before sealing. The waffles will keep in the freezer for several months.

How do you keep waffles crispy for a party? ›

Here are some other ways to keep the sogginess at bay:
  1. Place your waffles on a cooling rack in a low-heat oven (don't stack the waffles on top of each other).
  2. Throw your waffles in a toaster to refresh their crispiness.
  3. Make sure your waffle iron is very hot.

How long do homemade waffles last in the freezer? ›

Freeze the waffles for up to 3 months.

Make sure the storage container is well-sealed before putting the waffles back into the freezer. Well-stored waffles will taste almost as good as fresh ones when reheated. However, they will start to lose quality after a few months.

How do you keep homemade waffles from getting soggy? ›

Waffles toward the bottom of that stack will have no choice but to go limp. To keep a cooked batch of waffles warm, place them in a low oven directly on the oven rack, or on a wire rack where the air can circulate—never on a sheet pan, where they'll trap that steam and go soggy on the bottom.

Can you make waffles ahead of time and keep warm? ›

Grab a wire cooling rack and a warm oven.

If you're making an extra-big batch of pancakes, double that setup. Set the duo on a rack arranged in the middle of the oven, and set the temperature to 225°F. This temperature will keep the pancakes and waffles warm without continuing to cook them.

How to serve waffles to a crowd? ›

Some people like to keep pre measured waffle batter in disposable cups so that guests can make their own waffles on the spot and enjoy them right out of the waffle maker. However, I prefer making the waffles a couple of hours before guests arrive. I keep them on Oven Safe Wire Racks set on baking sheets.

Is it better to make waffle mix the night before? ›

For the tastiest waffles with extra soft insides, make the batter the night before and rest overnight. Or, at least 2 hours. Makes the flour grain swell because it absorbs the liquid.
