Homemade Potato Gnocchi Recipe (2)

Lately I’ve been playing around with lots of new recipes. In particular, recipes that require minimal ingredients. Recipes that can be made from pantry staples. And recipes that freeze easily.

This homemade gnocchi pasta is just that.

Plus, there’s the added benefit that making gnocchi is basically like playing with play doh. Which means it’s a great recipe for making with the kiddos. But even if you don’t have kids, it’s fun for adults too!

I’m thinking a big gnocchi pasta making party is definitely in order. Grab some wine, grab your friends, and get rolling.

What is Gnocchi?

  • Gnocchi is an Italian homemade pasta shaped like a dumpling. The standard recipe combines potato, egg, and flour. However, there are other gnocchi recipes that incorporate ricotta cheese, parmesan cheese, spinach or fresh herbs. You can even make sweet potato gnocchi.

Gnocchi may seem like a difficult recipe, but I’m here to hopefully show you that it’s really NOT!

This gnocchi recipe is basically foolproof and it requires just 4 simple ingredients and no fancy equipment! It turns out tender and delicious every time.

Ingredients Needed

  • Potatoes
  • Flour
  • Salt
  • Egg

Which Potato to Use?

  • I’ve found that russet potatoes work best for gnocchi because they cook up with less moisture. However, yukon gold potatoes will also work. You can even make sweet potato gnocchi.

No Fancy Equipment Needed!

You don’t need any fancy equipment to make this gnocchi. That’s why I consider it the best gnocchi recipe.

Many recipes for gnocchi call for a potato ricer. I don’t have one. And you don’t need one for this recipe.

The first time I made this gnocchi, I simply used a potato masher, and the gnocchi were delicious. The second time, I used a method where you grate the potatoes using the small holes of a cheese grater. These gnocchi were delicious as well, and perhaps a bit lighter and less dense. It’s now my preferred method for making gnocchi.

Also, many recipes have an additional step of adding ridges to gnocchi, using a rolling board or the tines of a fork. My recipe skips this step.

It’s said that the ridges help sauces adhere to the gnocchi, but I’ve found that sauce coats the gnocchi really well without this additional step.

My best tip for making the lightest, most pillow-y gnocchi is to be sure to not overwork your dough. Combine the ingredients until they just come together. It should only take a couple minutes to knead the dough into a mass.

Then, divide the dough into 8 pieces. Roll each piece into a 24″-long rope about ½” thick, and cut into ½” pieces. I then like to sprinkle them with flour, and roll them around a bit to get them nicely coated, and arrange them on a baking sheet lined with wax paper or parchment paper.

At this point, you can either cook the gnocchi right away, store them in the refrigerator for up to two days, or freeze them.

Recipe FAQs

Can Gnocchi be Made in Advance?

Gnocchi can be made up to two days in advance, stored in the refrigerator, and covered so that they don’t absorb any odors from the fridge.

Can You Freeze Gnocchi?

Gnocchi can be frozen for up to three months. To freeze fresh gnocchi without them sticking together, place them in the freezer spread out on baking sheets. Once they are frozen, transfer to a freezer bag. You can cook the gnocchi right from frozen in boiling water.

Do I Have to Boil Gnocchi Before Frying?

It’s not necessary to boil the gnocchi before pan frying. However, by boiling them first, you will guarantee that they are fully cooked throughout.

Why Are My Gnocchi Mushy?

If your gnocchi are mushy, they were probably boiled for too long. To ensure that you don’t overcook them, remove the gnocchi with a slotted spoon as they float to the top of the pot. Once they float, they are fully cooked.

Is Gnocchi Healthier Than Pasta?

Nutritionally speaking, gnocchi and pasta very similar. While gnocchi is made with potatoes, and pasta is made with wheat, they are both high in carbohydrates, and low in protein.

FAQs

What is the best flour to use for gnocchi? ›

Italian flour

Plus, it has too much protein: High-protein wheat results in chewy gnocchi. If you want to be true to Italian gnocchi, look for imported Italian flour marked "00 tenero," which is milled from soft wheat with a low protein content.

What type of potatoes are best for gnocchi? ›

Yukon Gold Potatoes are THE BEST potatoes for homemade gnocchi. They're dense, creamy, semi-waxy and do not retain too much moisture (if you love Yukon's for mashed potatoes, they make exquisite gnocchi).

Should you boil or bake potatoes for gnocchi? ›

The best gnocchi are made with baked potatoes rather than boiled. You get lighter gnocchi because the spuds don't absorb as much water. That means you won't need as much flour in the dough, which can make the dumplings heavy.

Is gnocchi better with or without eggs? ›

Do you need egg in gnocchi? You can make gnocchi without eggs. However, if you use egg yolks in your gnocchi you don't need to be so precious with it. Egg yolk added to your gnocchi dough helps improve texture, and keep it together while cooking.

What should you not do when making gnocchi? ›

Try not to knead it as kneading will develop the gluten and make your gnocchi chewy. Keep some flour in a cup for dusting the board and your hands as you work to stop the dough sticking. Cut your dough into 6 pieces and roll them each into fat ropes about as thick as your thumb.

Why did my homemade gnocchi turn to mush? ›

Adding too much flour all at once

It is very easy to add too much flour to gnocchi dough, which can make these dumplings glutinous, gummy, and sticky. If you dump all of the flour into your gnocchi dough at once, you won't have the same texture as a gnocchi that has just enough flour to bring it together.

Why did my potato gnocchi fall apart? ›

If you overdo it with flour, your gnocchi will be too hard, if you put too little they will break during cooking. The rule says that the flour must be at most a third of the amount of potatoes.

Is there a difference between gnocchi and potato gnocchi? ›

Unlike potato gnocchi, Roman gnocchi (Gnocchi alla romana), are made with semolina instead of potatoes and flour, that's why they are also called Semolina gnocchi. Roman gnocchi are shaped differently than potato gnocchi.

How do you know when homemade gnocchi is done? ›

Poach gnocchi in batches in a pan of lightly salted water for 2-4 minutes. Cooked gnocchi will float to the top. Strain and serve immediately with a good pasta sauce.

Do you salt water when boiling potatoes for gnocchi? ›

Prep and boil the potatoes.

Cover by at least 2 inches of water. Season the water with 1 tablespoon of salt and set over medium-high heat. Once the water is boiling, cover the pot partially and boil until the potatoes are very tender, about 25 minutes.

How do you get moisture out of potatoes for gnocchi? ›

Baking the potatoes instead of boiling them removes excess moisture, reducing the amount of flour you need for the dough, yielding light and fluffy dumplings.

What is the best flour for gnocchi? ›

You need to do plenty of that for homemade pizza dough, but you don't want to do much kneading at all when making gnocchi. Italian type 00 flours like Caputo and Anna brands produce a great result. Make sure you're buying 00 labeled for pasta and not labeled for pizza making.

Is gnocchi OK for weight loss? ›

Due to the smaller and denser nature of gnocchi, it is more likely that you will end up eating bigger portions than if you chose regular pasta. Although all foods can be part of a healthy diet in moderation, if you are trying to lose weight opt for other options than gnocchi or pasta.

Does 00 flour make better gnocchi? ›

What is the best flour for making gnocchi? I always suggest using 00 double zero flour. For most Italian dishes, this soft-wheat flour creates a delicate texture that's easy to bite through. Double zero is perfect for the light, pillowy texture you want for gnocchi.

Do you use plain flour or self-raising for gnocchi? ›

For guaranteed lightness in potato gnocchi, try replacing 25g of the plain flour with self-raising. Flattening the gnocchi helps them cook evenly, while the grooves from the fork pick up sauce. Gnocchi are best cooked and eaten as soon as possible after making.

How do you keep gnocchi fluffy? ›

For gnocchi with a fluffy texture, don't knead the dough past the point where the flour is fully incorporated into the potatoes. Think large lemon size when you tear off a piece of dough to roll out. Move the palms of your hands back and forth to roll the torn-off portion into a long rope.

Do you have to use russet potatoes for gnocchi? ›

Ingredients for homemade gnocchi

You need a floury baking potato, nothing waxy. Use what you would normally use to roast. In the USA you could use Yukon Gold potatoes. Russet potatoes will also work.
